We did almost the exact same trip last summer, I think the total km were almost 10,000 we put on. Gas cost a small fortune.
We really enjoyed the Cabot trail, we stayed a couple of extra nights in Baddeck.

There are two really great places for fish / chips or fried clams that I have found and routinely go back to whenever I'm down east. These were recommended by my wife who is from the maritimes, so you can say that the locals approve! Neither of these are fancy, but they have great fish.

1. "Islandview Canteen" - Along Hwy 3 between Chester and Mahone Bay, NS (locals call it the green canteen because its obnoxious green paint)

2. "Comeau's" - Pennfield, NB - Along Hwy 1 between St. Stephan and Saint John in NB
