What are they installing to update exactly ?

Just the latest flash from the full PSdZData ?

Just curious, they seem to get good reviews and was wondering what exactly was behind it.

You would have to elaborate as there are many out there.

Just a few local companies offering coding services, simply state gearbox (transmission) software update, chassis software update, engine software update.

Unsure of what exactly they are doing to claim this.

There are OEM and non-OEM updates.

There is also flashing OEM from another chassis (eg, M4 GTS onto M3).

There is just too much to speculate with such an open ended query.
