crimbo dinner

So I'm looking at planning a "smaller" Xmas dinner this year, and I'm open to ideas

The only thing I've not made is Turkey, I've done, variations of Ham/Pork roasts, Chicken, ribroast, beef wellington not done a salmon wellington

Also there's dessert, Tiramisus ? OH and DD dont really like cooked fruity desserts, nor do they like a trad. Christmas pud with brandy sauce

just opening the doors, to the usual trad fair or something a bit unusual

My family is Cuban, we basically eat roast pork with rice and beans for every holiday except Thanksgiving... even then there will be pork somewhere. Last year they did a whole pig for Xmas (the one in the pic is from several years ago, the one last year was much smaller). I don't cook so I'm not making anything except maybe some rum and cokes, but luckily my gf and her mom and sisters all cook so there will be no lack of food.

Pffft that pig in the pic was so big I remember everyone taking home enough pig for a month and even then we had waaaaaay too much left over. I don't think we made another one for at least 5 years or so. Normally they just make a shoulder or a butt. I guess our family is just not that big.

Last year I believe they got a baby pig and it was still too much but more reasonable. I hear they have one already lined up for next week. That first one we cooked ourselves. The one last year and this year I believe they bought already cooked.

Luckily I'm not in charge of any of that. I'm just there to eat.

That's the best position to be in.. supervisory. I will be attending my former employer's (retired) Christmas party on Friday. Somewhere about 200+ people. The 2 Caja Chinas are 7ft by 3ft, and 2 pigs of about 100lbs each are roasted beginning on Thursday afternoon by eager volunteer Chefs who lovingly tend to them all night long fortified by numerous cervezas and occasionally something stronger. Of course all the traditional "sides" are also included. The party is an over 50 year tradition and great fun.

UPDATE:

In the end did a Ribroast, Mash Pot's, Roasted Carrots, Gravy, Cranberry Sauce
And Store Bought Christmas Pud
to drink, Mimosa's

And my RIBROAST, MANnnnnnnnnnnnnnnnnnn it was the fooking bomb, nailed it, better than a virgin's first night

I used a method most of yall will prop know

1> Leave meat out for 6 hours
2> Coat with a butter mixture, of pepper and sage
3> Season generously with, Kosher salt
4> In a preheated oven of 500deg uncovered
5> weight x 5 rounded up (16minutes)
6> switch off the stove for 2 hours

Came out pink inside, nice firm bite, crusted skin and in the words of Jim Carey B E A Utiful !!!!

DD said it was really moist, was actually at one point using a spoon the tear the meat apart

Its much too late but maybe next year. Duck breast, dumplings, red cabbage and poultry sauce. A medium dry red wine and here we go.
Was tasty and quick to cook.
