Stability wise -- not a big effect.
Fuel economy, correct, and but not noticeable for a 3-hour flight. That is whyh you first saw the real ones only on the 340, and 747. Other Airbus A/C had dufferent ones on 318/19/20/21...

Therefore, of course, there will be some savings in any case, but not much for the short flights...

Some other planes (like 737-7/8, small Canadairs and so on) have them to maximally utilize the range.

In today's world, when the gas prices went up 5x, any savings are helpful, therefore we've seen them more and more on 757's mainly used for the x-country flights.
