I do a fair bit of cooking and have always wanted a decent set of knives.
I got myself these beauties on our last trip to Europe. Wusthof Ikon classic, beautiful knives and great to use. |

I'm a noob, but I bought the HORL 2 rolling sharpener, and knives are wicked sharp in comparison now. The magnetic "holder" can do either 15 or 20 degrees. I simply pull out 5-6 knives, turn on the TV, and start rolling. Before long, everything is sharp. One side does the sharpening, and the other does the finish smoothing. Not cheap, but certainly fool-proof in comparison to a wet stone.

[QUOTE=Alfisti;27571549]This is a serious rabbit hole.
Third is sharpening, purists will gasp but you need a certain skill to use a proper honing rod and wet stones, get the angle off by one degree and it's all over. I just use this and it is absolutely FANTSTIC https://chefschoice.com/collections/...es-model-315xv So after reading this post I did some googling and decided to take the plunge. I bought the Chef’sChoice 15 Trizor XV EdgeSelect Professional Electric Knife Sharpener for Straight and Serrated Knives Diamond Abrasives Patented Sharpening System Made in USA, 3-Stage, Gray. It came the other day, I love Amazon, and I ran the Myabi's through it. I haven't had great luck with the wet stone but this thing is the real deal. |
