The baking thread.~ Bread, pies, cookies , cake and more

A place where your baking skills are appreciated.


Made a couple of Oat and Banana breakfast breads this afternoon. Normally, I would make a single huge loaf but I prefer the two smaller ones. One will go in the freezer until needed.

1... First dough rising on bread proof for 30 minutes @100°F.
2... Second rising before baking o bread proof for 30 minutes @100°F.
3... Final product. Baked for ±40 minutes at 350°. Keep an eye on it.

Mischbrot

1/3 whole rye and 2/3 white unbleached all purpose flours.

Seasoned with German Brotgewürz, an equal mixture by weight of ground anise seeds, fennel seeds, coriander seeds and caraway seeds. I inspired by my experience frequent traveling to and living in Germany.

Back in the days before my kids (11 and 14) became addicted to their phones, we used to bake cool creations - mostly for bake sales but some just for fun.

This one was by far the most time consuming. It started as a cupcake. The animal crackers were spray painted with food coloring, the center shaft is a pretzel rod dipped in dark chocolate. The crackers are attached to candy canes. Each one took WAY too long to make and was difficult to hold together but it came out great.

These are meringue mushrooms. The are made in 2 sections - the heads and the stems. Dark chocolate holds them together and they are sprinkled with cocoa powder.

These chicken nuggets are actually brownies with icing coated in Frosted Flakes and were brought to one of the class morining get togethers at school and almost nobody ate them because they thought they were real Chicken McNuggets

Nice! My wife taught herself how to bake years ago. We always have fresh bread in the house, often times biscuits and cookies, and sometimes cinnamon rolls. It's crazy how cheap and easy it is to make bread, biscuits, and cookies.

It's been SO LONG since I made bread. I was spoiled by the Zoju bread maker.

These days, all I bake are pumpkin pies, using gma's recipe as a starter, then adding in my flare. 2 keys: 1) warming the entire mixture on the stove as you mix it. Reduces baking time to < 60 minutes so the crust doesn't burn 2) freshly grated ginger, copious amounts to the point you are almost spitting it out like a hair.

WHen it warms up I want to get back into practicing baking bread on the grill. When I pulled it off it was insanely good but I always had an issue with oven spring.

As much as I love the smell of freshly baked bread (who doesn't?) the thought of going through with the process seems rather involved.
I guess I'll stick to baking cakes and pies and stuff like that until the bug seizes me

Here is a recipe for one of my family favorites - I call it cracker crack because once you start you can't stop eating it. I have used matzoh (for Passover), Saltines and graham crackers. I personally like the graham crackers the best but the saltines are good too. Matzoh is good when you are stuck eating it for Passover and there are not many good desserts.

1 Cup white sugar
2 Sticks butter
1 Trader Joes Pound Plus Dark Chocolate bar (plus a few squares of the 72% extra dark bar)

Preheat the oven to 350 degrees

Melt the chocolate in a double boiler while the rest is baking

Line a jelly roll pan with parchment paper and crackers

Melt the butter and sugar together and wait until it boils for 3 minutes - it becomes very frothy and I stir it a lot so it does not burn.

Pour the mixture over the crackers and spread evenly (and very quickly) with a knife. If you are too slow it becomes difficult to spread

Bake for 10 minutes or until nicely browned

Pour the chocolate on and spread evenly

Sprinkle with salt while chocolate is still melted

Let cool a little and then put in the refrigerator or freezer to harden chocolate or else cutting is difficult and messy

Cut into pieces and try to stop eating them….

1. First rise.
2. Second knead and rise.
3. Egg wash and a sprinkle of coarse sea salt.
4. Fresh out of the oven.

Half whole rye, half white unbleached all purpose flours.

A variation of my normal bake. Seasoned with German bread spice, or Brotgewürz: anise, fennel and caraway. Normally I would also include coriander seed, but none in the pantry!

Spices are dry roasted, ground, then combined with the dry ingredients.
