I went through this last year. As a chef I wanted versatility in my grill. I highly recommend the American muscle grill. It is a standard very high output gas grill when needed but also will burn/smoke with hardwood, charcoal, pellet or briquette. They have an infrared attachment I bought as well so you can cook at 1600 degrees to really sear the proper way. It's an amazing piece of equipment and the build quality is phenomenal. Plus it's made in the USA! Few shots of my outdoor space and the grill.

A couple of old Pics. I'm getting a quote to do the stone work on Monday. I really don't want to do it myself...but I usually end up doing 'it' |

Update:
Got the stone put in but they forgot to cut the sink insert and have to come back and do it on site next week but progress is progress.

Used it for the first time yesterday, and just did a few steaks. Unbelievable how this creates and retains heat with relatively little fuel.

Just used my smoker for the first time this weekend. Smoked some ribs (no pics sorry) both nights.
Amazing. I'm not huge on ribs to begin with, used to really like them, but recently found them lackluster. Not anymore - this was awesome. Smoker put a really nice crust on them too which was tasty. I'm looking forward to trying out all sorts of different meat in the smoker this summer - going to be going through a whole lot of charcoal! |

Actually, it is quite nice right now - around the 20 C mark...so like 68F. Tshirts are now often selected now as clothing of choice. Always pants...no one wants to see my legs. |

And frankly, they'll still taste nothing like you would get out of a smoker. If you've got some excess funds lying around, send half to me and use the other half to get the smoker I got. It is about $300 - you throw a bunch of charcoal in and forget it basically - no fiddling around, just let it smoke and they have a bunch of recipes that tell you the time to let it sit in there for. Plus you check it at the end with a meat thermometer just to make sure. But honestly, mine was so easy. Came out delicious. |

I kept smelling real smoke coming over the back fences this past weekend, so was too embarrassed to bust out my gas grill. What is this thing Tshirts of which you speak? I know pants are those disgusting things I have to wear during work. |

Getting there. I just need to pressure wash the bluestone, polish the SS and have the grill calibrated tomorrow and we'll be set for the 4th of July!
(Don't worry, those bushes look much closer than they are from this angle in the picture, cheap camera )
