It may be your preference but after a discussion with Weber, they are designed to be used flat side up. Either way, do what you like, it is your grille and grilled food is delicious.

I made my first attempt at home made sausage this weekend. I have to say, the grinder is not great for stuffing the sausage. They turned out ok, but they did taste very good, the kids demolished them, next time i’ll cut back on the fennel and bump up the heat a bit. I think I’ll get a proper stuffer before making cases sausage again, I also make breakfast patties that were very good.

First time smoking a tri-tip. Got it up to like 135F in the smoker at 225 then took it out and seared it on the cast iron skillet with some butter. Came out very tasty and was actually super tender and juicy although I would of liked it slightly more rare, but I'm happy with it for my first attempt. Also smoked some ribs with this new rub I got, Dave Famous Rib Rub, sooooo good!

I have tried many, and I like most cheeses, generally I find the taste and mouth feel of blue cheese to be repugnant, however I will give an honest try to any blue cheese that is recommended (and that I can find at whole foods etc)

I make a brown sugar and syrup dipping sauce for Kielbasa. An ex’s grandma used to make it and I have been trying to replicate but we don’t talk.
Can probably put some bourbon, or other liquids in…..you’re look perfect to try with it
