Fresh mozzarella will also cause problems in low temp (home) ovens.

White pizza: fresh mozz, onions and balsamic glaze
Seasoned with s&p, thyme, rosemary, basil, oregano and EVOO

Scratch made crust with 50/50 Tipo 00 and semolina rimacinata. I added 10g of milk powder to the dough, which I often forget to do. It adds a nice tooth and bite to the edge of the crust.

The instructions say 425°F not 425°C. Unless you like your crust crispier than normal...

The oven itself is just about the only thing I didn’t build, it is made in Napa CA, and it is really nice to cook in.

In the last pic, the tile is finally done, I built every single part of it, the only things i didn’t do myself are the comp shingles, and the tile, I made the countertops out of concrete and polished them.

I had the best pizza last night...but was starving and didnt get a picture.

Regular pie, added ricotta cheese, prosciutto and drizzled hot honey over it....soooo good
