1. Second rise.
2. Egg wash and a sprinkle of poppy and sesame seeds.

Then in the oven on convect baking for 35-40 minutes @375°.

Das Brot

A variant of my daily bread. 80/20 white unbleached all purpose and whole rye. I used up the last of my whole rye, time to reorder.

There is nothing like the appearance, aroma, texture and and flavor of freshly baked bread.

One of my normal bakes, usually eaten as toast for breakfast.

50/50 whole rye and white unbleached all purpose flours. This is a 900g flour weight loaf. After baking it is around 1200g.

63% hydration.

Flour, water, salt, yeast.

Since I plucked veggies from the garden, I decided to bake a Focaccia bread.

Mixing the flour, baking powder, seasonings and green onions.

Roggenmischbrot mit Brotgewürz

1/3 whole rye and 2/3 unbleached white all purpose flours.

900g flour
590g water
25g bread spice: dry roasted and ground anise, caraway, fennel and coriander seeds
18g salt
7g yeast

Mix, knead, overnight refrigerated ferment, shape, 1 hour proof, bake at 425F for about 55 minutes.

Shot in the dark here, I have oil, sugar, salt, baking powder/soda, flour, chocolate chips, but don't want to run out to buy milk/eggs/butter....is there still a good way to make cookies? I found some online but wanna know from anyone w exp?

Homemade raspberries jam. I had a good crop this year and used the last five cups that I kept in the freezer to make jam.

1... Five cups of frozen berries.
2... Mashed while cooking.
3... Heating two cups of sugar at 250°F. for 15 minutes.
4... Adding sugar to the mix, boil and stir often and allow to reduce and thicken.
5... Made two jars.

Latest bake.

300g whole rye flour
600g unbleached white all purpose wheat flour
25g German Brotgewürz
18g salt
1 envelope commercial yeast
590g water

Brotgewürz: equal parts anise seed, caraway seed, fennel seed and coriander seed. Dry roasted then ground with mortar and pestle.

Bit late to this, but there's something called 'Chocolate Depression Cake' that might work for cookies too (or cake cut up into small sizes)
