Soba katakushi iwashi
Boiled and dried anchovies on soba noodles. With sesame seeds, nori, sesame oil and tamari. Really good! First time for me using soba noodles and iwashi. Soba noodles are made with mostly buckwheat, and some wheat. They have the same caloric density (kcal/g) as glutinous rice, and the noodles are gluten-free as is rice. Noodles have more protein, but less fat, than rice acknowledging that both have low levels of fat and protein. Carbohydrates per 100g are equal between noodles and rice. Soba noodles are now a staple in the rotation and will be interchanged with rice. Soba noodles have a more pronounced "wheaty" flavor than rice. Glutinous rice, unlike Basmati and jasmine, is pretty bland tasting to my palate. And the noodle form factor is interesting when I want a change from rice. Katakushi iwashi is quite good and has earned a spot in the rotation, when I want a change from katsuobushi or shaved smoked skipjack tuna. Iwashi are subtle in these areas: crunchy, chewy, salty, and fishy. Subtle is the operative word - iwashi is not overpowering in any of these areas, to my surprise. I was expecting something very crunchy, salty and fishy. Iwashi can be used as a condiment or as an ingredient, for example in dashi broth. I have had a long term goal of eating more fish, and have marvelled at the variety of fish available in Japanese cuisine, quite unlike typical American cuisine and grocery stores. There is a great east Asian (Japanese) grocery near me and I can source all ingredients in the Japanese culinary vocabulary. Accompanied by grapes. Today's lunch was a simple salad. Romaine lettuce from my garden, green and Kalamata olives, Feta cheese, roasted onion bits and blue cheese dressing.
