What's For Dinner Tonight?

Had a 2 sitting dinner tonight. First was chipotle grilled shrimp with skewered veggies on the grill, and grilled artichoke with peanut aoli. Veggies were zucchini, red pepper, brussel sprouts, and heart of palm. I’d never grilled the palm before, but it turned out great. Second sitting to be shown in wine thread.

But hamburger needs to be well cooked to avoid such things as toxoplasmosis, E.coli and listeria.

Mushroom risotto!

Flavor 11 on a scale of 1 to 10.

Risotto with onions and mushrooms simmered in beef stock until al dente. Finished with butter and pecorino romano. Garnished with mushrooms confit (mushrooms slowly simmered in thyme, garlic, evoo and butter) and slices of pecorino.

With a simple side salad of arugula, o&v&s&p. Fresh mango for dessert.

My cooking, serving practice certainly with awareness for my and those consuming my foods well-being.

Beef roasts, steaks, burgers [poultry too], employ my ThermPro temp probe 'food guidelines' to ensure proper 'heat' for consumption...albeit, at times, the lower temp ranges...yet still good to go for healthy consumption [myself, Fam, friends]

...does that makes sense, ok? Or am I missing something?

Made a large batch; tonights delight along with three (3) vacuum sealed freezer portions for future servings.
[real PITA to make, worth it tho!]

Shrimp, calamari, mussels
Seasoned rice
Peas, scallions, sweet peppers, asparagus
Garlic cheese bread

Not just on occasion. I like my steaks with a pulse as long as both sides are well seared.

Poultry, pork and ground beef are another story. Just be aware.

I used to be in the well done club for most of my life for the above reason, but recently have decided to throw my aqueous humour to the wind and live dangerously. Not quite McDonald's Double Quarter Pounder with extra E. coli onions dangerous, though.....
