I don't have a set recipe per se. I buy small bags of seafood from our local fish market. (Lobster and crab meat, clams, scallops, mussels, calamari, shrimps, smoke salmon) that I parboil in just a bit of water and I keep the water that will be added later.

Then I boil my potatoes, celery and onions. Drain. Amount is up to you.

Add everything in a pot. At least ¼ pound of butter and about half a liter of 18% cream. Keep the mixture thick then add some or all of the saved water until you get a nice texture. Add grounded peppercorn to taste. No need for salt as the water has extracted it during the parboiling.

Put the pot in the oven to slow cook at 225°F. until it starts to bubble. Stir a few times.

There you go. That's basically my recipe.

Salad with grilled Chaldean flatbread. Salad included tomato, onion, Kalamata olives, pepperoncini and lots of parmesan! EVOO, freshly squeezed lemon juice and S&P.

Fresh cherries for dessert, then homemade strawberry ice cream for an evening treat!

Wifey whipped up some West Indian Kedgeree (Coconut Curry Rice with Cod). It's delicious. A new way to enjoy fish.

Early dinner tonight, jus my simple 'basic' favs...

• Meat - Broiled grass-fed Angus rib-eye [yes, prefer it 'red']
• Potato - Baked w/ my concoction of olive oil, chopped garlic, a splash of balsamic vinegar, pinch of Himalayan salt & peppercorn
• Veggie - Roasted broccolini w/ brushed caramelized garlic butter

Did carnitas burritos tonight, with fresh guacamole and a homemade tomatillo salsa. Unfortunately I didn’t take pictures of the carnitas or the burritos! I did snap a pic of the veggies for the salsa while they were on the grill, and then a pic of the salsa and guac before it got put away after the meal. Next time, salsa needs more heat.
