I actually had my Easter dinner for lunch yesterday. I took a late afternoon/early evening partial shift pro bono at the ER to replace a friend so she could have time with her young family.

I whipped up some tofu planks with lime/peanut glaze. Served over rice with a side of green beans and some peanut/honey drizzle. Not to brag, but it was damn tasty. Have to work this one into our rotation.

A while ago, I mentioned how much of a pita it was to make cabbage rolls and that I was going to experiment doing it as a two layer lasagna style.

Although it didn't turn out pretty, it sure was good. I've learned a few ideas for next time. I might even try a traditional three layer lasagna using cabbage instead of pasta. Stay tuned for that one.
