I killed an old boar during a very dry season so he wasn't as fat as I'd have preferred. You have to add fat and cook them low/slow. Great flavor though.

The best eating ones are the young sows.

This was taken in a barley field. Dry fields, but decent flavor. Soaking all night in a crockpot, then my wife's talent with Hispanic flavors yielded a wonderful dish. Only thing lacking was a bit more density to the sauce, but we didn't have any starch.

Funny thing, she send Huerto (me) to the corner store to get masa mix, then complains when he comes home with the wrong type. . .

I haven't been able to think about eating, without almost gagging, up until the past half hour or so. I haven't eaten all day, and I'm stuck at work (skipped over my lunch break), so I'll probably just go home and eat in a two or three hours.
