My parents taught me similarly. It makes far more sense to give a gratuity at the start. I always use the example of a parking garage attendant: it makes much more sense to give them $5 when you arrive then when you leave. I've always called ahead to restaurants and, without asking for extraordinary treatment, just explain that I have a meeting or special occasion and what would they recommend. At most good restaurants the person on the phone will be one of the managers and almost always they will make a note and if they don't greet at the door, they'll come over to the table. In some restaurants, they've actually sent over a bottle of wine.
