My favourite nachos:

- Pick up lime flavoured tostitos / nachos (or extra kick, habanero/lime nacho chips)
- Chicken, cubed and fried in lime juice / tex mex spices
- Shred cheese, lettuce, cut up some tomatoes and green onions.

Base is the chips, chicken and cheese, put in oven at 350 till cheese melts, then put the veggies on top and add a little more cheese to make it stick. Serve with pickled jalapenos and sour cream on the side

Omg I'll make those for me but the tiny chefs may need something they can impress the moms with.

It's funny, my son's besties show up out home 30 minutes before lunch or dinner at less three times a week, and now their moms follow since they are afraid I let their kids slice their hands off since I make kids use real cooking knifes to keep them safe. I've spent a year teaching the little devils how to fry meat and how to chop ingredients. Their moms just don't believe a lunch can be an hour late just so kids can practice safely and they can't believe a tomato can be served if it's not totally evenly cut.

I need that dip of yours. And remind your wife I'll marry her any day of the week if she gets bored with your skinny ass!

What kind of chips (a brand so I can search if we have similar here and Jesus you're Canadian. Cheese does not go near Mexican food! Stop using the NAFTA to become sufta (stuffed and north American trade alliance stuffed. I'm a comedian today!)

U mean the last six months with my fucked up ankle? And how does one eat with a fork only? In my table people get stabbed for attempting to hold one without an other if not for buttering a bread or to stab an other.

Not sure how it is bad. Tons of habaneros or jalapenos, a little beef, tons of salad or kale because I like the crunch, some tomato based sauce.

I'm telling you! My version has like zero fat, but a ton of garlic, spices and its low on carbs! If only I could stop eating the portions of seven men at once but my habanero/ jalapeno addiction with the guacamole you taught me are my doom.

No silverware. Tortillas only. And each time you take a bite you eat the carb-ware device. 6 oz of meat takes at least 2 flour tortillas

How on earth do you get six oz of meat that's been drained of fat to two carb device? It takes at least six carb devices to get enough peppars in you to want meat in one!

Then there is the salad you serve with the dips and it's like 7 small tortillas with only healthy shit and one with meat and that's the ratio when jalapenos are not in season (not super spicy, habaneros are just not as tasty so then I out more salad in with the guacamole).

Cheese goes everywhere near Mexican food. Under, around, on top, oh yes.

At least in my interpretation of Mexican it does.

The brand of chips (lime) is called "Tostitos". They have many different flavours, but for nachos, I like their lime.

I'll google it, thanks! The brand names mix these up for someone who is not fluent at cheese foods.

I've never put any cow products to Mexican food. Once in Seattle I took my kiddos friend with us to a Mexican restaurant and she ordered a plate of nachos. I had to go talk to the chef (I visited that joint at least 2 a week and always tipped more than 30% because they did my dish ever time to perfection!) to ask him if I'm doing it wrong or are Americans doing it wrong.

I'm doing it right btw! I'm using low monetary value ingredients and no cows if not as meat!

I don't know how you mix fats and all those beautiful ingredients. I don't know why you'd put cheese on anything when you can have guacamole and spices

(this went from me telling you you're wrong and a bad chef to a love fest but I'm hungry and in pain since my accident left me basically an invalid).

See - we struck a compromise as usual. You disagree with me using cheese, and I disagree with you using guac. So we can both theoretically agree in public not to use those ingredients on nachos, while secretly still using exactly those ingredients in the privacy of our own homes.

I did too, trust me, before moving to the USA I didn't touch that ever after one disaster. My kids absolutely hated Mexican food because of it too but here is the thing:


I didn't eat olives for 18 years since I got bad ones the first time. I didn't eat Mexican food for 10 years because of bad guacamole but the restaurant I told you about made my try theirs. They told me they had made their from ripe ingredients.

One taste and I knew the difference. It is a must and it ties the experience together
