My favourite nachos:
- Pick up lime flavoured tostitos / nachos (or extra kick, habanero/lime nacho chips) - Chicken, cubed and fried in lime juice / tex mex spices - Shred cheese, lettuce, cut up some tomatoes and green onions. Base is the chips, chicken and cheese, put in oven at 350 till cheese melts, then put the veggies on top and add a little more cheese to make it stick. Serve with pickled jalapenos and sour cream on the side |

It's funny, my son's besties show up out home 30 minutes before lunch or dinner at less three times a week, and now their moms follow since they are afraid I let their kids slice their hands off since I make kids use real cooking knifes to keep them safe. I've spent a year teaching the little devils how to fry meat and how to chop ingredients. Their moms just don't believe a lunch can be an hour late just so kids can practice safely and they can't believe a tomato can be served if it's not totally evenly cut. I need that dip of yours. And remind your wife I'll marry her any day of the week if she gets bored with your skinny ass!

Real Mexicans don't use orange cheese. I can't stand some of that stinky white dirty-foot cheese my wife keeps having travelers bring her from south of the border

No silverware. Tortillas only. And each time you take a bite you eat the carb-ware device. 6 oz of meat takes at least 2 flour tortillas

I had to go talk to the chef (I visited that joint at least 2 a week and always tipped more than 30% because they did my dish ever time to perfection!) to ask him if I'm doing it wrong or are Americans doing it wrong. I'm doing it right btw! I'm using low monetary value ingredients and no cows if not as meat! I don't know how you mix fats and all those beautiful ingredients. I don't know why you'd put cheese on anything when you can have guacamole and spices (this went from me telling you you're wrong and a bad chef to a love fest but I'm hungry and in pain since my accident left me basically an invalid).

Most Mexicans (in Mexico) are too poor to have avocados, meat, or cheese. Hence, tacos de papas!!!! Mash some potatoes, add a bit of chile, wrap in tortilla and fry in lard.
