Shakshuka
Bruno Albouze’s version

Stewed veggies with chorizo and eggs. Similar to ratatouille. Spanish and Mexican cuisine have similar items as shakshuka.

Chorizo, onions, garlic, bell pepper, zucchini, eggplant, crushed tomatoes and eggs. Seasoned with EVOO, cumin, paprika, salt and black pepper. Plated with toasted English muffin (any bread will do) and drizzled with EVOO.
