I know some VW's, Porsche, Ferrari ECU's don't have data logging software but there are ways to pull data and have the respective manufacturers interpret that data. I believe this is what OP did, Porsche pulled the data from the track timer on the GT3RS.

I wonder how the shop owner's business has faired since this debacle...?

Seems like his insurance going to total it and he's looking at getting a salvaged title. Since he stated he was going to keep the car anyways and keep it as a track only car.

Update from GT3 RS Owner 4/1/17:

Shop insurer dragging and making excuses. They have until Monday then will treat non response as a denial of claim. Will then sue them, Sue shop for negligence and likely move the car to get a more thorough estimate for my insurance to total. Typical insurance co BS.

Used up my patience. Shop insurer has concluded it's a total but dragging on the offer. Infuriating. Had my lawyer drop a letter Friday and gave them COB on Monday. I'll go get numbnutz on negligence with bad intent.
