So many ways to prepare it. And it's cheap and healthy.

There was a time when you couldn't get me to try it. But then I discovered Extra Firm tofu and some good recipes. I'm still not a fan of tofu in most restaurants. I like mine firm and browned or crispy. If it's mushy, I can't abide.

Free Build Your Own pizza at Blaze Pizza. Super thin crust. I get a Simple Pie cheese pizza until I have enough points to get a free one. Then I “splurge”.

Too hot to fire up the stove or oven. So I whipped up a Puttanesca Tomato-Chickpea salad. Was delicious. I just wish I had some tasty New England grown tomatoes. Midwest tomatoes just don't have as much flavor.

Yes indeed. Probably could have used more. And more Kalamata olives as well. I would have lightly salted the diced tomatoes before adding them to the salad, but Wifey is trying to reduce her sodium intake.

Did you leave the tomatoes at room temperature first? Makes a big difference to the flavour.

No, but the salad itself sat at room temp for maybe 30-40 minutes before we ate it. I'll try leaving the tomatoes out for a while next time.
