It's seems pretty easy to pull off. I get concerned that if I have a fire related to electrical will my insurance try to deny a claim because a licensed electrician didn't perform the work. Otherwise I think I'd do more electrical myself.

I have an electrician coming out next week to see what options I have for a hard wired EV charger. I have 200A service but it's split 100A back of house and 100A in garage. The back of house has all the heavies on it, but 100A is overkill. I'm not sure the wire running to the sub is rated for more than the 100A it's carrying. Ideally I'd like to make the sub panel 125A and leave the other panel 75A. Garage only has lighting, fridge and microwave. Lights are all LED. I'd like to be able to put in an 80A breaker for EV charger

Yes. And I'm not sure what you mean.

If you can money-shift it, it's a manual transmission. "Yeah, but NO ONE puts an automatic trans shift knob on a manual transmission."

Unfortunately I live in the suburbs and don’t trust my neighbors to mow their grass right much less do electrical work that could burn our houses down. Maybe once I get my hundred acres they could do what they want

There's not much risk to ac wiring as long as you don't hook anything up wrong. Its the DC wiring that really takes skill and good tools to put together when you get to the high current levels.

Getting the wiring wrong for a EV charger in your home could mean an additional fire risk as well as the EV itself, much better off with a hybrid that uses a normal electric socket or just a plain gas car, your home is then not at risk.
Does the home insurance cover should an EV charger station catch fire even if fitted by an approved electrician...

Hybrid 100% is where it's at. We have an x5e and love it. I'm leasing a pure electric electric as a 3rd car because I'm really curious about the range anxiety, charging infrastructure, etc.i haven't taken delivery of the electric yet.

The new Porsche 911 GTS is hybrid and weighs only about 100 lbs more than its non hybrid predecessor. That is pretty impressive to me, though I will probably be watching hybrid and EV development for a few more years rather than buying.
