If you want a versatile camera, go for the d300s, but if you like cleaner ISO better IQ and better video capability, go d7000.

D300 feels really good in the hand, really really really good.
D7000 grips aren't as nice, and the controls requires a lot of two buttons simultaneous press, the D300 has more single flip buttons for adjusting settings.
The sensor on the D300s is the same as the d90 and d5000, maybe slightly better but it's technically the same one, so not much of an upgrade there.

As far as I see it, the D300s has faster auto focus, faster shooting fps, more professional options such as bracketing 7 frames, and feels better in hand and more rugged.

The D7000 will be cheaper, better IQ if you use the better lenses, Higher ISO, higher dynamic range, and a little more mp if you want to blow those pics up (not that much more), and better HD video.

Internally D7000>D300s
Externally D300s>D7000

so pick your poisons.
