Late responding, but the Sony a7RIII blows away any current Canon body, in terms of resolution and dynamic range. I moved from the 5D4 to an a9 and a7RIII combo. I've got the Metabones adapter MkV, at use it with my EF 14mm f/2.8L II and my EF 500mm f/4L IS II. There's no loss of function with the wide angle, but a little slowness with the 500mm. I've tried it with the adapter and the EF 24-105mm, the 70-200mm and the 100-400mm, with no loss of functionality.
I have gone to the FE 12-24/f4, the FE 24-70/f2.8 and the FE 100-400mm for the Sony's lock-on AF functions and the eye-detect AF functions. The EF lenses don't have these AF enhancements.
So, to summarize the a7RIII gives you WYSIWYG EVF functionality, lock-on AF in several modes, eye-detection AF, silent shutter, hundreds more AF points, AF down to f/11 and a little more than one-stop additional DR.
Go for it.
