Call me old fashioned, but I'd suggest sticking with OEM parts for your M5. Sure there are "high performance" and cheaper options out there, but everything is a compromise, and even though it's not the cheapest, OE parts are generally of very high quality, and the car will perform as it was designed to.

Plenty of places that will sell you genuine BMW parts for less than the dealer charges.

It would also be a good idea to replace everything related - slave cylinder, flush the fluid, throwout bearing, etc. Heck, you may even want to go ahead and replace the rubber shifter bushings and such - they deteriorate with age, and will never be easier to get to than when the transmission is out.
